These gluten free Halloumi Burgers are the ultimate vegetarian burger, served with a lime and coriander mayo and hot honey. The perfect combination of salty cheese, a naturally-gluten-free, crispy coating and sweet and tangy dressing and ready in 15 minutes.

Why I Love These Halloumi Burgers

This gluten free Halloumi Burger Recipe features golden, crispy halloumi, a 2-minute lime and coriander mayo, and the sweet perfection of hot honey.

I serve mine in a gluten free brioche bun and it’s always ready in under 15 minutes. Since developing this recipe I’ve started making them weekly for a quick lunch!

I’ve tested these crispy halloumi burgers in a number of different ways and frying them in a pan wins every time. It only takes 5 minutes with minimal oil.

Updates for June 2026: After making this recipe a lot I’ve added an extra step to make it even better! Soaking the halloumi in boiling water gets the BEST texture – trust me, it’s worth the extra few minutes to make them!

Pair these halloumi burgers with some air fryer chips, gluten free onion rings and homemade rocket salad, or with sides like my potato salad and Mexican corn salad.

Ingredients and Substitutions

There’s a printable recipe card below for these easy halloumi burgers with the full quantities. But here are the main ingredients and ideas for any swaps:

  • Halloumi: I tend to use one block to make 2 chunky halloumi burgers. You can make 4 thinner ones if you prefer, or you can also buy pre-cut halloumi slices.
  • Plain Gluten Free Flour: Essential for that crispy coating! If you’re not gluten free you can just use normal plain flour for this.
  • Paprika
  • Garlic Granules
  • Oil: Frying the flour-coated halloumi burgers is what makes them go gorgeously crisp on the outside. I tend to use olive oil for frying mine.

You will also need lime (juice), chopped fresh coriander (or cilantro in the US), mayonnaise and garlic paste (or crushed garlic) for the sauce.

How to Make Halloumi Burgers

Why do you boil the halloumi first?

Soaking halloumi in boiled water is the trick to getting that restaurant-style texture. It softens the cheese, reduces some of the intense saltiness, and stops it from being as rubbery in texture when cooked.

Can I make these halloumi burgers on the BBQ?

This recipe is specifically made to be pan-fried, as the flour coating needs to cook in the oil to crisp up. To BBQ halloumi you’d need to omit the flour coating, and essentially just have a grilled halloumi burger instead.

How To Serve Halloumi Burgers:

You can load your crispy halloumi burgers up however you like, but I recommend:

  • Hot Honey: My homemade hot honey recipe contrasts so well with the salty cheese.
  • Burger Buns: In these photographs I used the Schär Brioche Buns as they are my favourite shop-bought gluten free bun. You can’t beat my my homemade gluten free burger buns or my gluten free soft bread rolls recipes though!
  • Lettuce: Romaine, baby gem or iceberg work well, as done rocket or spinach leaves.
  • Tomatoes
  • Red Onion: Or pink pickled onions from a jar are delicious too.

Halloumi Burgers Recipe

These easy Halloumi Burgers are the ultimate vegetarian burger, served with a lime and coriander mayo and hot honey. The perfect combination of salty cheese, crispy coating and sweet and tangy dressing, all served up in a gluten free burger bun. Ready in 15 minutes!

Equipment

Ingredients 

  • 200 g block of halloumi
  • 2 tbsp plain gluten free flour
  • 1 tsp paprika
  • 0.25 tsp garlic granules
  • 1 tbsp oil, (for frying)

To serve the burgers:

  • 2 tbsp mayonnaise, (I use light mayo)
  • 0.5 lime (juice only)
  • 1 handful finely chopped coriander , (cilantro)
  • 1 tsp garlic paste
  • Hot Honey
  • Tomatoes, (sliced)
  • Lettuce Leaves
  • Red Onion, (sliced)
  • Gluten Free Burger Buns

Instructions 

  • Cut the halloumi block in half to create two thick slices. Place the slices in a large bowl, cover with boiling water and leave to soak for 15-20 minutes.
  • Mix the gluten free flour, paprika and garlic granules together and then spread out on a plate.
  • Remove the halloumi from the water and blot dry with some kitchen towel to dry. Coat the halloumi slices on all sides with the flour mix, pressing it in to ensure it's completely coated.
  • Heat the oil in a frying pan on a medium heat and once hot add the halloumi. Fry for 3-4 minutes, carefully turn the halloumi over and fry for another 3-4 minutes. It should be crispy and golden on both sides.
  • Meanwhile, mix the mayonnaise, lime juice, chopped coriander and garlic paste together to make the sauce.
  • Stack the cooked halloumi burgers in your gluten free burger buns topped with a drizzle of hot honey, lettuce, tomatoes, red onion and a good slather of the lime and coriander mayo. Serve straight away.

Notes

  • Storage: These halloumi burgers are definitely best eaten fresh. You can keep any leftovers in the fridge for 24 hours and reheat them in a pan, but I’d recommend eating them hot and freshly cooked. The halloumi will harden when it goes cold.
