This Slow Cooker Tuscan Chicken recipe is the best way to get a restaurant-quality dinner, with zero effort. Tender chicken breast chunks in a rich sun-dried tomato, garlic and parmesan sauce – just chuck everything in the slow cooker and let it work its magic!

Notes On This Slow Cooker Tuscan Chicken Recipe
🍗 Based on my Creamy Tuscan Chicken recipe, this has all the delicious rich flavours and tender chicken breasts, but with none of the effort. Just dump and go.
🍗 This recipe has been updated for September 2026 to swap the original double cream for a cream cheese. After a happy accident, I retested this several times and found it created a much richer and creamier sauce. The original is still in the recipes notes though, in case you’d rather make that!
🍗 Top Tip: You don’t have to brown the chicken before slow cooking if you’re short on time, but it is 100% worth it in my opinion as it deepens the flavour.
🍗 Serve this slow cooker tuscan chicken with rice, cheesy mashed potatoes or crispy parmentier potatoes. Gluten free garlic bread is optional… but recommended!

Ingredients and Substitutions
There’s a printable recipe card below for this Slow Cooker Tuscan Chicken with the full quantities. But here are the main ingredients and ideas for any swaps.
- Chicken Breasts: You could also use chicken thighs, which will be more forgiving if you want to leave this to cook for a longer period of time.
- Gluten Free Flour: Use a plain gluten free flour or all purpose gluten free flour blend.
- Garlic
- Paprika
- Dried Oregano
- Sun Dried Tomatoes: Get jarred sun dried tomatoes as you’ll need to use some of the oil from the jar to fry off the chicken. If not, you’ll next some additional extra virgin olive oil if you are including this step.
- Cream Cheese: You can use double (heavy) cream, but on retesting multiple times, I’ve found cream cheese creates a richer, thicker sauce. So good. I usually use a light cream cheese to keep the calories down, but full-fat works just as well.
- Chicken Stock: Either use homemade chicken stock or ensure you pick a gluten free stock cube. I always use the Knorr stock pots which are certified gluten free.
- Parmesan
- Spinach: I use frozen spinach as I always have this to hand. I usually leave it to defrost while the base sauce cooks, then drain any excess water before adding. Fresh spinach also works fine if you have this and would rather use it.
Notes On Making This Recipe Dairy Free: You’d need to replace the cream cheese with a vegan alternative. I’d also replace the parmesan with a little nutritional yeast to keep that cheesy flavour. I’ve not tested this personally but these are what I’d advise trying.

Storing and Freezing Instructions
TO STORE: This is a great recipe for batch cooking – any leftovers can easily be portioned up and kept in the fridge for 2-3 days. Reheat for an easy lunch!
TO FREEZE: You can also portion this slow cooker Tuscan chicken up, freeze it, and then reheat straight from frozen to serve when you need a quick and easy dinner.

Equipment
Ingredients
- 400 g chicken breasts, (cut into chunks)
- 2 tbsp plain gluten free flour
- 3 tsp chopped garlic
- 1 tsp paprika
- 2 tsp dried oregano
- 100 g sun-dried tomatoes in oil, (roughly chopped – reserve some of the oil for frying if including this step)
- 165 g cream cheese, (I used Light cream cheese)
- 200 ml gluten free chicken stock, (Made with 1 stock cube/stock pot and 200ml boiling water)
- 50 g grated parmesan cheese
- 120 g frozen spinach, (defrosted and drained of excess water – or use fresh)
- Salt and Pepper
Instructions
- Mix the gluten free flour, paprika, salt and pepper together and add to a large bowl.
- Turn the chicken pieces in the flour mix to coat.
- OPTIONAL: Add around 1 tbsp oil from the sun dried tomatoes jar to a large pan and place on a medium-high heat. Fry the chicken for 1-2 minutes until just starting to brown, to seal the meat (you can skip this step if short on time!)
- Add all of the ingredients EXCEPT the spinach and cream cheese to the slow cooker. Mix well and cook on high for 3-4 hours or low for 5-6 hours.
- After the allotted time, stir in the spinach and cream cheese and cook for another 30 minutes to heat through. Serve hot or portion up to freeze.

- Updated for Sep 2026: This recipe originally used 100ml double cream in place of the cream cheese. After testing multiple times I much preferred it with cream cheese so I’ve updated this version to reflect this! If using cream, you can add this at the same time as everything else, just omitting the spinach until the final 30 minutes of cooking.
- Storing: This slow cooker recipe is great for batch cooking – simply portion it up and keep in the fridge for 1-2 days or freeze. You can reheat it straight from frozen.
