These Gluten Free Sheet Pan Kebabs are my coeliac-safe take on the viral social media recipe, and are SO easy to make! Cooking these easy beef kebabs on a baking sheet makes them for the perfect hands-off dinner, served with gluten free flatbreads, tzatziki and salad.

Why I Love These Sheet Pan Kebabs:

  • Quick and Easy: These sheet pan kebabs only need a few storecupboard herbs and spices, with the mixture taking 5 minutes to throw together. Then they bake in the oven in just 15 minutes!
  • Healthier Option: These gluten free kebabs have all the fun and flavours of a more traditional kebab, but the oven-baking method, and using lean beef mince, makes them a much healthier option then a kebab shop takeaway.
  • Coeliac-safe: Most kebabs are not gluten free, but these are! Make sure you take extra steps to ensure there’s no cross contamination to keep them coeliac-safe. Coeliac UK has some great tips you can follow.
  • Batch Cooking: For meal prep, freeze the mixture before baking, or freeze the kebab strips to reheat for busy evenings. I love them loaded in gluten free flatbreads (also freezable!) and slathered in homemade tzatziki sauce.

Ingredients and Substitutions

There’s a printable recipe card below for this viral sheet pan kebab recipe with the full quantities. But here are the main ingredients and ideas for any swaps.

  • Lean Beef Mince: You can also swap this for chicken mince, turkey mince or lamb mince if you prefer.
  • Onion Salt: Or use very finely chopped onion for a softer kebab.
  • Garlic Granules: You can also use fresh minced garlic or garlic paste.
  • Paprika: I use a combination of paprika and smoked paprika. You could also use a hot paprika if you want a little bit of spice.
  • Spray Oil: Top tip – save some money by decanting olive oil into a spray bottle. It’s a much ‘cleaner’ way (no added ingredients) and way cheaper than buying spray oils!
  • Cumin
  • Oregano
  • Fresh Parsley

I also like to have a variety of topping options including chopped tomatoes and cucumber, tzatziki sauce, gluten free flatbreads, pickled pink onions and pickled chilli peppers.

How to Make Sheet Pan Kebabs

Gluten Free Sheet Pan Kebab Recipe

These easy sheet pan kebabs have all the flavours of a takeaway kebab, with none of the gluten! A really simple dinner idea for meal prep or summer dinners, perfect loaded in a gluten free flatbread.
Servings: 4 people

Equipment

Ingredients 

  • 500 g lean beef mince, ( I used 5% fat but you can use 10% or 15% if you prefer)
  • 1 tsp onion salt
  • 1 tsp garlic granules
  • 1 tbsp paprika
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tbsp oregano
  • 2 tbsp fresh chopped parsley
  • Spray oil

To serve:

  • Gluten free flatbreads
  • Tzatziki
  • Pink pickled onions
  • Pickled chillis
  • Tomato and cucumber, cut into small chunks
  • Fresh parsley

Instructions 

  • Preheat the oven to 220C/ 200C Fan / Gas Mark 7. Line a baking tin with baking paper and spray with a little oil.
  • Mix all the kebab ingredients together in a bowl.
  • Press the kebab mixture down into one even layer in the baking sheet, to around 1cm thick. Use a blunt knife/cutter to divide into 8 lines and add extra lines for texture. Bake for 15-20 minutes until booked through (it will shrink a little, but don’t worry!).
  • If making the flatbreads from scratch, make these while the kebabs cool and then wrap in a tea towel to keep them warm/soft until serving.
  • Once cooked, cut the kebab into strips along the lines and load them into the flatbreads with your toppings of choice.

  • Make your own homemade gluten free flatbreads using my recipe – or I recommend the Schär or Warburtons gluten free flatbreads for shop-bought.
  • I recommend serving these sheet pan kebabs fresh but you can reheat them or enjoy them cold. You can also make them and freeze them – or freeze the mixture before baking and defrost when needed!
