I don't know about you but I am a huge fan of speedy meals - and any 30 minute gluten free meal I can cook is a bonus.
I'm often home late from work so having half an hour to cook is about the maximum I can spare more weekdays.
Which is why I've put together this handy guide to some of the speediest gluten free dinners on the blog!
With some of these ready in 10 minutes or less, one thing I can promise is that none of these will take more than half an hour to put on the table.
So whatever mood you're in, I hope you'll find a recipe here that you can cook up for an easy gluten free weeknight meal.
And of course, some of these are great for leftovers which means you can have an even speedier lunch the next day too.

These easy chickpea and sweetcorn fritters are so quick to make and they're dairy free and vegan too.
You can have them cold with salad for lunch the next day or even stack them up and pop them in a gluten free burger bun.

Brunch-style recipes for dinner is one of my favourite indulgences and this chorizo and sweetcorn hash is always a favourite.
Made with cooked potatoes it's also a great way to use up any leftovers from previous meals such as Sunday roasts.

I absolutely love these courgette and halloumi fritters because they're so easy to throw together in a hurry.
They're also delicious in a salad the next day so make some extra for a speedy lunch and you'll thank your past self!
If you want a rich and creamy meal which tastes divine but takes minimal effort than beef stroganoff is a great shout.
This creamy white wine and mustard sauce with fillet steak can be served with microwaved rice to reduce the cooking time even more.
Houmous and Chorizo Pasta
This gluten free pasta recipe uses houmous as a sauce - something I hadn't tried until now and I absolutely love it.
Adding the chorizo is my favourite thing to do but you could keep it vegan by frying some tomatoes and peppers instead if you like.

Here's another really quick and easy recipe if you are craving Chinese food - my gluten free salt and pepper chicken.
