This Creamy Chicken Tomato Pasta is the perfect quick and easy dinner that’s ready in under 15 minutes, using gluten free pasta. Tender chicken breast is cooked in garlic and herbs with fresh tomatoes, double cream and parmesan for a tasty gluten free dinner.

Notes On This Tomato Chicken Pasta

This easy, chicken and tomato pasta recipe is one of my faves to whip up on a busy evening, because it literally cooks in the time the pasta takes to boil.

It’s packed with flavour, with the garlic, oregano and rosemary flavouring the sauce, and big juicy bursts of tomatoes.

I like to serve mine with some gluten free garlic bread and use a good quality gluten free pasta like Rummo or Garofalo. It makes a big difference!

Ingredients and Substitutions

There’s a printable recipe card below for this cream tomato and chicken pasta recipe with the full quantities. But here are the main ingredients and ideas for any swaps.

  • Gluten Free Pasta: Any shape works for this, but I like penne as it fills up with the sauce! This would also work with spaghetti or even gluten free gnocchi.
  • Tomatoes: I usually use cherry tomatoes or plum tomatoes, but you can use larger tomatoes and chop them into chunks.
  • Chicken Breast: Or chicken thigh. Omit for a vegetarian version.
  • Onion: I use red onion but a brown onion would work fine.
  • Garlic: Fresh minced garlic, frozen chopped garlic or garlic paste works.
  • Herbs: I use a combination of oregano and rosemary.
  • Vegetable Stock Pot: Ensure it’s gluten free, I use Knorr.
  • Double Cream: Or heavy cream in the US. For a lighter version you could use crème fraîche or even a light cream cheese.
  • Tomato Puree: Or tomato paste, to add colour and flavour.

How do I store leftovers of this creamy chicken tomato pasta?

If you want to make extras for the next day, I recommend using a good quality gluten-free pasta, as cheaper supermarket ones can go really hard when chilled. Keep any leftovers in the fridge and either eat cold or reheat. Do not freeze.

Can I make a dairy free creamy tomato pasta?

To make this recipe gluten and dairy free, use a vegan cream replacement such as Elmlea Plant and omit the parmesan to serve.

Creamy Chicken Tomato Pasta Recipe

This easy, creamy chicken tomato pasta is ready in under 15 minutes! Tender chicken breast in a creamy tomato and her sauce, tossed through gluten free penne pasta!
Prep: 5 minutes
Cook: 10 minutes
Total: 15 minutes
Servings: 2 people

Equipment

Ingredients 

  • 200 g gluten free pasta, ideally penne, fusilli or pasta shells
  • 200 g cherry tomatoes, halved
  • 2 chicken breasts, chopped into small chunks
  • olive oil for frying
  • 1 red onion, finely chopped
  • 2-3 tsp chopped garlic
  • 1 tbsp dried oregano
  • 1 tsp dried rosemary
  • 1 vegetable stock pot
  • 75 ml double cream
  • 1 tbsp tomato puree
  • 150 ml cold water

To serve:

  • Fresh basil
  • Parmesan cheese

Instructions 

  • Cook the pasta as per the pack instructions while you make the sauce. This is usually around 10-12 minutes in boiling, salted water.
  • Heat the olive oil in a large frying pan, then add the chicken. Cook on a medium-high heat for 4-5 minutes until the chicken starts to brown.
  • Add the onions, garlic, tomatoes, oregano and rosemary and fry for a further 3-4 mins on a medium heat.
  • Next add the stock pot, tomato puree and 150ml cold water and simmer for 1 min, stirring to dissolve the stock pot.
  • Pour in the double cream, stir well and keep on a very low heat until the pasta is done. Add the drained pasta, mix well and serve with some fresh basil and parmesan cheese.
