This easy Beef and Chorizo Stew is the perfect blend of smoky, spicy deliciousness. A rich and warming gluten free stew, which thrown together in the slow cooker for ease. Filled with the rich flavours of chorizo, paprika and red wine, this is a proper winter warmer!
I do love a gluten free slow cooker recipe and this Slow Cooker Beef and Chorizo Stew is just so delicious – and so easy to make!
It’s gluten and dairy free, packed with melt-in-the-mouth chunks of beef, spicy chorizo, and a warming tomato, beef stock and red wine sauce.
With extra veg like carrot and mushroom chunks, it’s filled with goodness and promises to bring big warmth and flavours to any cold day.
Plus cooking it in the Crock Pot will make your house smell DELICIOUS all day long, and it’s great for chucking in before work in the morning. You’ll come home to dinner ready!
I love this easy recipe as an alternative to my classic Slow Cooker Beef Stew, served up with a heap of Cheesy Mashed Potatoes or my crispy Parmentier Potatoes on the side.
This is a great stew recipe for batch cooking and I always make sure I have extra portions of this beef and chorizo stew in the freezer for an easy meal on a busy night.

Ingredients
There’s a printable recipe card for this slow cooker Beef and Chorizo Stew below. But for the shopping list here are the main ingredients you’ll need.
- Plain Gluten Free Flour: Using a plain gluten free flour blend helps to brown the beef and also thicken the stew.
- Diced Beef: I usually use beef shin in stew, but chuck steak also works well. You can use a lean diced beef for a lower fat version but it may not need to cook as long.
- Chorizo: I use a chorizo sausage and chop it into slices. You could also use pre-chopped diced chorizo.
- Red Onion: You can also use a brown onion.
- Carrots: Use carrots chopped into chunks or swap for baby carrots.
- Mushrooms: Closed cup mushrooms or Chestnut mushrooms work best – or use baby mushrooms whole.
- Gluten Free Beef Stock Pot: Ensure you use a gluten free stock pot – I use Knorr.
- Red Wine: You can swap this for hot water mixed with the beef stock cube if you want an alcohol free version.
- Chopped Tomatoes: I use canned chopped tomatoes for this stew.
- Dried Thyme
- Dried Rosemary
- Smoked Paprika
- Gluten Free Worcestershire Sauce: Find it in the free from aisle or use Henderson’s Relish instead, which is gluten free.
How to Make Beef and Chorizo Stew
There’s a printable recipe card below with the method. But here are some step-by-step photos to show you how easy this Slow Cooker Chorizo and Beef Stew is to make.
Add the olive oil to a large pan and place on a medium heat. Add the chopped chorizo and fry for 2-3 minutes until starting to crisp up.
Scoop the chorizo from the pan, leaving the oil behind, and add it to the slow cooker.
Coat the beef in the gluten free flour then add to the frying pan with the chorizo oil. Fry for 3-4 minutes until browned on all sides then add to the slow cooker pan.
Fry the onion, carrots and mushrooms for 3-4 minutes in the frying pan on a medium heat, then add to the slow cooker.
Add the rest of the ingredients to the slow cooker and mix well. Place the lid on and cook for 4-5 hours on high or 7-8 hours on low, until the beef is nice and tender.
Stir the stew well and serve hot with sides like cheesy mash, roast potatoes or even rice.
Storing and Freezing
This Slow Cooker Chorizo and Beef Stew is perfect for making in bulk for meal prep. Leftovers can be kept in the fridge for a couple of days in an airtight container.
You can also freeze this easy stew. Portion into containers, label them up and freeze for up to 6 months. You can even freeze them in portions with mash like a ready meal.
Reheat thoroughly before eating – you can microwave from frozen for an easy gluten free ready meal, but homemade!

- 300 g mushrooms, halved

- 0.5 tsp smoked paprika
