These slow cooker Beef and Chorizo Stew is the perfect winter warmer, with spicy chorizo, tender beef and a smoky paprika, tomato and red wine sauce. Gluten and dairy free.
Add the olive oil to a large pan and place on a medium heat. Add the chopped chorizo and fry for 2-3 minutes until starting to crisp up. Scoop the chorizo from the pan, leaving the oil behind, and add to the slow cooker.
Coat the beef in the gluten free flour then add to the frying pan with the chorizo oil. Fry for 3-4 minutes until browned on all sides then add to the slow cooker pan.
Fry the onion, carrots and mushrooms for 3-4 minutes in the frying pan on a medium heat, then add to the slow cooker.
Add the rest of the ingredients to the slow cooker and mix well. Place the lid on and cook for 4-5 hours on high or 7-8 hours on low, until the beef is nice and tender. Stir well and serve hot.
