This easy Gluten Free French Toast recipe is the ultimate brunch idea – and ready in less than 15 minutes! Slices of gluten free bread are soaked in egg, milk and vanilla, before being fried in butter, stacked high, and topped with berries, yoghurt and maple syrup.

This Gluten Free French Toast recipe is so easy to make. Using just 5 ingredients it’s ready and on the plate in under 15 minutes.
French Toast is also a great way to use up leftover gluten free bread (or those holey slices we all hate!) to turn it into a delicious breakfast and cut down on food waste.
It’s a great alternative to gluten free pancakes and I love to top mine with lots of Greek yoghurt, berries, maple syrup and icing sugar. But you can mix it up however you like!

Ingredients and Substitutions

- Gluten Free Bread: Any gluten free bread will work though I prefer white bread – you can even use homemade gluten free bread or my gluten free chocolate chip brioche for something extra special.
- Eggs
- Milk: If you need a gluten and dairy free French toast you can use any kind of dairy free milk. Almond milk, coconut milk, soya milk or gluten free oat milk all work.
- Vanilla Extract
- Butter: Use a vegan butter if you need a dairy free version of this recipe.

Storing and Freezing Instructions
TO STORE: If you want to get ahead, you can easily make and cook this French Toast, then keep it in the fridge and reheat to eat in a pan or microwave.
TO FREEZE: For more of a meal prep option, freeze slices of this French Toast and then defrost and reheat in a microwave or pan to serve.

Gluten Free French Toast Recipe

Ingredients
- 2 large eggs
- 4 slices gluten free bread
- 2 tbsp milk
- 1/2 tsp vanilla extract
- 1 knob butter, for frying
To Serve (optional):
- Greek Yoghurt
- Maple Syrup
- Mixed Berries
- Icing Sugar
Instructions
- Add the eggs, vanilla extract and milk to a bowl and whisk well. Pour the mixture onto a large plate to make it easier to soak the bread.
- If you like you can cut the bread into triangles, or leave the slices whole. Take a slice-or-two (whatever will easily sit on the plate without overlapping) and dip into the egg mixture.
- Leave to soak for 10-20 seconds then turn over and repeat. Remove the soaked bread onto a separate plate and keep going until all your bread is soaked in egg mix.
- Melt the butter in a large frying pan or skillet on a medium heat. Once hot, add the bread slices (however many will fit in one layer at-a-time) and fry for 1 minute. Flip and fry for another minute – the bread should be golden on each side. If not, fry a little longer until it is.
- Remove from the pan and stack the French toast on a plate, keeping it warm with some foil while you cook the rest. Once it is all cooked, serve with lashings of maple syrup, Greek yoghurt and fresh berries.
