If you’re looking for a super quick and easy gluten free dinner idea then you have to give my gluten free chicken fried rice a go.

This is one of my favourite ways to use up any leftover chicken from a roast dinner.

It’s just so quick to make and you can go from hungry to eating dinner in less than 15 minutes.

Which is just the kind of simple gluten free dinner recipe I need in my life to be honest!

All you need is a few storecupboard ingredients and you’ll have a super easy creation at the flick of a wok handle!

And of course, you can always jazz it up and make this recipe again with prawns, cooked beef, tofu or pork – or just a mixture of it all.

It’s really versatile and a great dish for those evenings when time is tight.

Gluten free Chinese food

It’s always so frustrating that having coeliac disease often means missing out on Chinese food.

Finding a gluten free Chinese restaurant is a rarity as most dishes use soy sauce, which unfortunately isn’t gluten free.

I always use tamari soy sauce, which is gluten free and found in the free from aisle.

To me it tastes the same but it means I don’t have to miss out on making all of my favourite dishes.

I used to absolutely love just ordering a tub of chicken fried rice and demolishing the whole thing, so making my own was a revelation.

I added in some extra stir fry veg and a bit of sweet chilli sauce to give my version of this classic a kick – and make it a bit healthier!

All-in-all it’s a pretty healthy dish but can also make a nice side dish if you wanted to have it with something like my gluten free Chinese curry.

Or it would go super well with my sticky gluten free marmalade chicken thighs – if you haven’t tried these yet then you must – they’re so so tasty!

What ingredients do I need?

Honestly the ingredients for this gluten free chicken fried rice couldn’t be simpler!

To start with, you’ll need some pre-cooked chicken, so this is great for making the day after a roast dinner.

I tend to pick whatever I can off the chicken carcass and shred up any big bits of meat.

You’ll also need some pre-cooked rice.

You can either use the pre-cooked microwave pouches or cook some rice ahead of time.

If you are cooking the rice yourself, I find it’s best to make a few hours before so that it can cool down and dry out a bit.

This gives the dish a better texture and is drier – more like you’d get in a Chinese restaurant.

I fry my rice is sesame oil as I find it gives it a lovely edge of flavour.

You’ll also need:

  • A pack of stir fry veg (whichever veg you like, I tend to buy the pre-mixed packs in the supermarket)
  • Sweet chilli sauce
  • Tamari gluten free soy sauce

If you want, you could garnish your chicken fried rice with some sliced spring onions for a bit of extra flavour too.

Or sprinkle over a dash of sriracha chilli sauce for a spicy kick – I absolutely love it!

How do I make chicken fried rice?

Once you’ve got all your ingredients, making this gluten free chicken fried rice is super easy.

I stir fry the vegetables first, so they are still crunchy but starting to cook through.

Then you scrambled the eggs in the pan so you get those lovely eggy lumps throughout the rice.

Stir the vegetables and egg together, mix your sauce up in a bowl and then add it to the pan along with the rice and chicken.

Keep stir frying until it’s hot through – it really is that simple – then serve up. Done!

The recipe is gluten free and also dairy free – if you want a vegetarian version, you could use tofu instead of chicken, or just stick to veg instead.

Here it is, the easiest way to use up your roast dinner leftovers – my gluten free chicken fried rice!

This recipe serves two people and you can easily double the quantities for four instead.

It also works well as a side dish if you’re cooking up a bit of a gluten free Chinese food feast!

Chicken Fried Rice

Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

This easy chicken fried rice is a simple dinner idea which is gluten and dairy free. Quick to whip up using leftover roast chicken, or swap the chicken for prawns or tofu if you like. Serves 2 people or 4 as a side dish.

Ingredients

  • 320g cooked basmati rice (approx 150g uncooked)
  • 250g cooked chicken (shredded)
  • 2 tbsp sweet chilli sauce
  • 2 tbsp gluten free soy sauce
  • 1 tbsp sesame oil
  • 300g mixed stir fry vegetables
  • 2 large eggs

Instructions

  1. If you have not yet cooked the rice, cook as per the pack instructions. I find it best to cook the rice ahead of time because it tends to dry out a little which makes the texture of this nicer - but you can cook it and add it straight to the pan while still hot.
  2. In a small bowl, mix together the sweet chilli sauce and soy sauce. Set to one side.
  3. Heat the sesame oil in a large wok on a high heat. Once hot, add the stir fry veg mix and stir fry for 3-4 minutes. You want the veg to still be nice and crunchy.
  4. Push the veg to one side of the wok and crack the two eggs into the pan. Using a spatula, scramble the eggs and cook through. Then mix the vegetables with the scrambled egg.
  5. Add the shredded chicken and rice to the pan and then pour over the sauce. Stir fry until fully mixed and hot through, then serve straight away.

Notes

  • For an extra garnish, top with some chilli flakes, a dash of sriracha or chopped spring onion.
  • Ensure you check the sweet chilli sauce is gluten free and make sure you use a gluten free tamari soy sauce ('normal' soy sauce contains gluten).
