This easy Parsnip Soup recipe is creamy, lightly spiced and delicious – with a secret ingredient for an extra protein and fibre punch. It’s super filling, gluten free and vegan, and perfect for winter lunches or batch cooking.

- Parsnips: This recipe could also work with carrots if you prefer.
- Olive Oil
- Onion and Garlic: You could use fresh minced garlic, garlic paste or chopped garlic, and a red or brown onion.
- Cannellini Beans: Tinned beans are super cheap and cheerful and a great way to add fibre and protein. Swap for any white bean, like butter beans.
- Curry Powder: I use mild but you can use hot. Ensure it’s gluten free.
- Vegetable or Chicken Stock: Again ensure you’re using a gluten free stock cube or pot like Knorr, or a premade gluten free stock like Pott’s. You can also make your own.

Storing and Freezing Instructions
TO STORE: Any leftover soup can be poured into a tub/s and cooled, then refrigerated for up to 5 days. Reheat in a pan on the hob or microwave to serve.
TO FREEZE: This soup recipe is great for batch cooking – I like to portion mine into single serving containers then freeze. You can then heat from frozen on the hob or in the microwave when you need an easy meal!
Parsnip Soup Recipe
Equipment
- OR blender
Ingredients
- 500 g parsnips, peeled and cut into small chunks
- 1-2 tbsp olive oil
- 1 onion, finely chopped
- 3 tsp chopped garlic
- 400 g tin cannellini beans, drained
- 2 tsp mild curry powder, ensure it’s gluten free!
- 1000 ml gluten free vegetable stock, or chicken stock
Instructions
- Drizzle the olive oil to a large, lidded saucepan and place on a medium heat.
- Add the garlic and onions and gently fry for 3-4 minutes until they begin to soften.
- To the pan, add the peeled and chopped parsnips and the curry powder. Mix well to coat everything in the spices, and fry for a further 5 minutes.
- Add the (drained) beans and pour in the hot stock. Stir, bring to the boil, then turn down to a low simmer. Place a lid on the pan and continue to simmer for 15 minutes until the parsnips are very soft.
- Turn off the heat and blend the soup, then serve.

This curried parsnip soup is filling enough to enjoy on its own, but it also goes really well with the following sides:
- Gluten Free Bread: Lightly toast some gluten free sourdough or make your own gluten free bread to slice and dip or soft gluten free bread rolls for the side.
- Crusty Baguette: These homemade gluten free baguettes are perfect for dipping with their crunchy crust and soft interior.
- Croutons: My favourite topping for this soup is a good handful of gluten free croutons as they add a nice crunch.
- Bacon: if you don’t need this recipe to be vegan I highly recommend adding some crispy topped bacon on top of your parsnip soup. It’s so good!

Very easy to make this delicious warming comforting soup. I will definitely be making this again. It was a complete meal, very often soups don’t fill you up. Loved the addition of cannelini beans, hidden fibre, always a good thing 😊
