When it’s hot outside I always reach for these easy lemon ice lollies. They only take a few minutes to throw together and are the perfect hot weather treat.
These easy lemonade popsicles only need 3 ingredients – water, lemon and sugar. They’re gluten free, dairy free and vegan – perfect for everyone to enjoy.
I love having some frozen treats stashed in the freezer ready for when summer (ever) arrives, like these lemon popsicles and a tub of my homemade frozen raspberry yoghurt. Or even my frozen strawberry yoghurt bites.

- 3 Ingredients: Honestly this recipe could not get any easier – you only need lemons, water and sugar to make them.
Ingredients and Substitutions
The recipe for these lemon ice lollies is so simple, all you will need to make them is:
- Lemons – I recommend using fresh lemons as I like to use the zest and the juice for extra tang. You can use lemon juice from a bottle if you need to though.
- Water – Straight out the tap, it couldn’t get any easier.
- Sugar – I use caster sugar (baker’s sugar in the US) for this, but any white sugar should work. You could switch for honey if you prefer.
How to make lemon ice lollies
Making these lemon ice lollies is really easy – there’s a printable recipe card below if you want to print it and save it for later.
To make these easy lemon popsicles:
1. Zest one of the lemons – I like the do this step to make them extra zesty. However if you don’t want to, you can just use the juice on its own.
2. Add the zest, the juice of both the lemons, sugar and water into a saucepan and place on a low heat.
3. Heat until the sugar has dissolved then remove from the heat and cool (you want it to be room temperature ideally before putting in the freezer). If you want to, you can strain the zest out, but I like to keep it in there for extra colour.
4. Pour the liquid evenly between the ice lolly moulds – you may find it easier to do this if you decant the liquid into a jug first. Place the sticks in them and freeze for at least 5 hours (until solid) before eating.
Variations
Want to mix things up a little bit? Once you’ve made these lemon ice lollies you could try:
- Lemon and Lime Ice Lollies: Try mixing an equal combination of lemon and lime juice for double the citrus hit.
- Pink Lemonade Ice Lollies: Blend a handful of raspberries and add to the mixture for a fruity, pink lemonade popsicle.
- Orange and Lemon Lollies: Substitute half the water in the recipe for orange juice for an extra fruity lolly.
- Lemon and Elderflower Lollies: Add 1 tbsp elderflower cordial to the water mixture when heating for a floral twist on this popsicle.
Frequently Asked Questions
Before we get started, here are the answers to some questions about this lemon ice lollies recipe. If there’s anything I’ve not covered, let me know in the comments!
I recommend using fresh lemon juice because I think it tastes so much better in these homemade lemonade popsicles. However, if you only have bottled lemon juice you can use this too and it works just as well.
Usually I leave mine for at least 5 hours so they are frozen solid. If you have a quick freeze section, it may take less time. You can also make them and leave them to freeze overnight if you know a heat wave is coming!
If you don’t like the idea of adding sugar to this recipe, you can lessen the amount for a more tangy, less sweet version. You can also use honey, agave or maple syrup as your sweetener if you prefer.
I’m not sure these ice lollies will really ever go off, but as a rule I don’t like to keep food for more than 6 months in the freezer. I’m sure you’ll scoff these in that time!
