This lemon chicken traybake is also dairy free and being a one-pan recipe it’s perfect for saving on washing up too.

Chicken thighs are a cheaper cut of meat compared to chicken breasts, and with potatoes as the main carbohydrate this is a great budget meal too.

It’s the perfect summer dinner recipe with flavours that’ll make you feel like you’re dining al fresco in the sunshine!

Lemon Chicken Tray Bake Ingredients

But here’s an overview of the main ingredients you’ll need to make my lemon garlic chicken tray bake:

Chicken Thighs: I always use chicken thighs with the bone in and skin on for this recipe. You’ll get a much better flavour, the skin crisps up beautifully and it’s cheaper. However you can use chicken thighs – or even chicken breasts – if you prefer.

Maris Piper Potatoes: A floury potato like King Edwards will also work, or you could use new potatoes or Jersey Royals whole if you prefer.

Courgette: This is a classic summer veg and pairs well with the lemony flavours. You can omit this or switch for something like aubergine or green beans if you prefer.

Tomatoes: On the vine tomatoes always look lovely in the centre of a tray bake. And they roast up to provide gorgeous bursts of flavour.

Lemon Chicken Marinade Ingredients

The marinade for this lemon chicken tray bake recipe also uses a few simple ingredients – and it’s completely dairy free:

  • Olive Oil
  • Lemon Juice
  • Lemon Zest
  • Garlic
  • Honey
  • Gluten Free Chicken Stock
  • Dried Oregano
  • Sea Salt and Ground Black Pepper

I also like to add a few extra lemon slices to my tray for extra citrusy flavours!

To make this, you’ll just need a large baking tray or sheet pan – and a bowl to mix up the marinade.

Make sure you always double check your chicken stock is gluten free as some brands are not suitable for people with coeliac disease.

What to serve with garlic and lemon chicken tray bake

There are many gluten free side dishes that can complement the flavours of this tray bake, whatever the occasion.

Here are a few ideas of side dishes to try:

  1. Salad: This dish is filled with summer flavours to always works well with a lovely green salad. I love adding rocket for a rich, peppery twist.
  2. Garlic Bread: Gluten free garlic bread is perfect for mopping up the juices of this tray bake – you can make my gluten free garlic bread recipe while this cooks.
  3. Green Vegetables: If you want some extra veg with your meal, why not pair it with some steamed tenderstem broccoli, asparagus or spinach.

What can I do with my leftovers?

Leftovers are always a rarity in our house, but you can easily save any uneaten chicken and potatoes for the next day.

Either reheat it thoroughly in the oven or microwave, or enjoy it cold.

I love to shred the cold chicken from the bone and add it, along with the leftover veg, to a fresh green salad for lunch.

Lemon Chicken Tray Bake

This simple one pan meal uses chicken thighs and potatoes for an affordable, flavour-packed dinner. This Lemon Chicken Tray Bake is gluten and dairy free and a perfect summer dish for a family meal.

Ingredients

  • 8 chicken thighs (skin on)
  • 800g Maris Piper potatoes (peeled and cut into 1-2 inch chunks)
  • 1 courgette (cut into thick slices)
  • 300g tomatoes on the vine
  • 2 tbsp olive oil
  • 2 lemons (zest and juice)
  • 4 tsp chopped garlic
  • 1 tbsp honey
  • 150ml gluten free chicken stock
  • 1 tbsp dried oregano
  • Sea salt flakes
  • Cracked black pepper

Instructions

  1. Preheat the oven to 220C / Fan 200C / Gas Mark 7 and set aside a large baking tray (or two smaller ones).
  2. Add the chicken thighs, potato chunks and courgette slices to the tray(s) and space out in one even layer. (If everything is very tightly packed I suggest using two baking trays.)
  3. Drizzle with a little olive oil and sprinkle over a pinch of sea salt flakes, toss to coat and then place in the oven for 20 minutes.
  4. In a bowl mix the lemon juice and zest, garlic, honey, chicken stock, oregano, and a generous seasoning of salt and pepper.
  5. Once the chicken has had 20 minutes, remove from the oven and place the tomatoes in the middle of the tray. Pour over the marinade. You can also add some extra slices of lemon here if you like too.
  6. Toss everything so that it is coated in the marinade. Place back in the oven for another 25-30 minutes, turning half way through. Remove from the oven and serve straight away with a fresh green salad on the side or some steamed green veg.
