Tips For Foraging for Wild Garlic

Wild garlic (also known as ramsoms) comes into season in the UK between February and June. You can often find it carpeting woodland and wet areas, with a strong garlic smell often indicating its presence!

If you’re new to foraging for wild garlic, you can check out The Woodland Trust’s guide to identifying wild garlic and how to forage responsibly.

It’s always important to make sure you have permission to forage legally, and that you do so sustainably so you only take what you need for your own personal use.

But done in the right (and legal!) way, foraging can be super fun – there’s no better feeling than baking up something using food you’ve picked or foraged yourself!

Ingredient Substitutions

There’s a printable recipe card below for these gluten free cheese and wild garlic scones with the full quantities. But here are some swaps for the main ingredients:

  • Gluten Free Flour – I use self-raising gluten free flour, but if you only have plain or all purpose gluten free flour, add an extra 3 tsp gluten free baking powder to the mix.
  • Milk & Butter – use dairy free milk and butter to make this recipe dairy free as well, and either swap the cheese for a vegan one or omit it completely.
  • Wild Garlic – If you can’t forage or buy wild garlic, you could swap this for chopped chive or chopped spring onions instead. Both would work really well!
  • Cheese – I use a sharp Cheddar for maximum flavour. You could use a milder Cheddar or swap for a smaller quantity (around 50g) parmesan if you prefer.

Storing and Freezing Instructions

TO STORE: Once cooled, these scones can be kept at room temperature in an airtight container for up to 3 days. I recommend eating them fresh, and if not, reheating briefly in the microwave, air fryer or oven to serve warm.

TO FREEZE: Freeze any cooled scones in a bag or tub and then either reheat gently from frozen, or defrost at room temperature and then refresh as above to serve.

Cheese and Wild Garlic Scones

These gluten free Cheese and Wild Garlic Scones are perfect for foraging fans! Ideal for a savoury cream tea or for dipping in your favourite soup.
Prep: 10 minutes
Cook: 18 minutes
Total: 28 minutes
Servings: 8 scones

Ingredients

  • 300 g self-raising gluten free flour, (see notes if using plain GF flour instead)
  • 50 g unsalted butter, (cut into small cubes)
  • 100 g strong Cheddar cheese, (grated)
  • 1 large egg
  • 100 ml milk, (plus extra for brushing)
  • 1.5 tsp gluten free baking powder
  • 1/2 tsp xanthan gum
  • 10 g wild garlic, (washed and chopped into small pieces)
  • Salt and pepper, (to taste)

Instructions

  • Preheat the oven to 200C / Fan 180C / Gas Mark 6 and line a baking tray with a sheet of baking paper. Set aside while you make the scone mix.
  • Add the gluten free flour, xanthan gum and baking powder to a bowl, along with a generous helping of salt and pepper. And stir to mix.
  • Add the butter to the bowl. Using your fingers, rub the mix together until it resembles breadcrumbs.
  • Lightly mix the milk and egg in a separate bowl to combine, then add into the flour mixture. Add the cheese and wild garlic (reserve a small handful of each for topping) and use a wooden spoon to bring the mixture together. As soon as it comes together, use your hands to bring it together, kneading it lightly into a smooth dough ball.
  • Place the ball of dough onto a lightly-floured worktop and press down into a circle approximately 2 inches thick, using your hands to shape it. Cut into 8 wedges using a large, sharp knife.
  • Place the wedges on the lined baking tray with a little space between them. Brush each scone with a little milk and then sprinkle with the reserved grated cheese and wild garlic.
  • Bake in the oven for 15-18 minutes, until golden on top. Cool on a rack before serving. These are best served warm (not hot).

Notes

  • Top Tip: Gluten free scones don’t rise as much as ‘normal’ scones, so always make sure you cut them nice and thick to begin with!
  • Using Plain Flour? I usually use the FREEE self-raising gluten free flour, but if you only have a plain flour blend mix an extra 3 tsp gluten free baking powder, along with the additional baking powder already in the recipe.
  • Want round scones? Simply use a round cutter to cut out what you need, then gently reshape the dough with your hands and keep going until you have all your circles cut out.

This recipe is so easy and I can confirm that these scones taste absolutely divine. I will be making as many as can before the wild garlic season ends.
They were also a hit with my family.
