These easy Banana Baked Oats are a great gluten free breakfast meal prep idea, packed with protein and fibre and just like having dessert for brunch! You can bake a whole batch of these then portion them up to last the week – perfect if you’re often short of time midweek!

Notes On These Protein Banana Baked Oats

🍌 These easy Banana Baked Oats are great for meal prep as you bake them into bars and slice them up, a bit like cake for breakfast!

🍌 These Baked Oats are a bit like a cross between a gluten free flapjack and a squidgy dessert. They’re not sickly, but sweet enough to feel like a treat!

🍌 I make these using vegan protein powder and gluten free oats, making them completely gluten free, coeliac-safe and also vegan.

🍌 Once you’ve made this base recipe you can easily customise it – add cinnamon, dried fruits, white chocolate chips or different flavour protein powders.

Ingredients and Substitutions

There’s a printable recipe card below for these baked banana oats with the full quantities. But here are the main ingredients and ideas for any swaps:

  • Bananas: The riper the bananas, the better. I like to use them when they have lots of black spots as they go super squishy and extra sweet.
  • Gluten Free Oats: You can find these in the free from aisle. Normal oats are not safe for people with coeliac disease due to the cross contamination risk.
  • Vegan Protein Powder: You can use any flavour, but I prefer something like vanilla or chocolate. Whey protein can be used but vegan protein (like pea or hemp) is much better for baking. This one is the one I have as it’s gluten free.
  • Chocolate Chips: I use dark chocolate but you could use milk or white if you prefer. Make sure they are gluten free with no ‘may contain’ warnings.
  • Vanilla Extract
  • Almond Milk: I use this almond milk – you can swap for any milk (dairy free, or cow’s milk are both fine) but I use unsweetened almond milk to keep the calories lower.
  • Baking Powder: Not all brands are gluten free so check my gluten free baking powder guide if you’re unsure.
  • Maple Syrup: Or use honey if you prefer.

How to Make Banana Baked Oats

Step 5: Bake until cooked through, leave to cool then portion into squares.

Storing and Freezing Instructions

TO STORE: Once baked, I find these keep well in the fridge for up to a week.

TO FREEZE: Freeze any leftovers (I do this in individual squares between sheets of baking paper) and defrost at room temperature when needed.

Banana Baked Oats Recipe

These easy Banana Baked Oats with protein powder are the perfect meal prep breakfast idea. Slice into squares for brunch on-the-go!

Cook: 30 minutes
Total: 40 minutes

Ingredients 

  • 2 ripe bananas, the blacker the bananas the better if possible!
  • 200 g gluten free oats
  • 60 g vegan protein powder
  • 50 g dark chocolate chips, plus a few extra to sprinkle on top
  • 1 tsp vanilla extract
  • 400 ml almond milk
  • 1 tsp baking powder
  • 1 tbsp maple syrup

Instructions 

  • Preheat the oven to 180C / Fan 160C / Gas Mark 4. Grease a 20cm x 20cm square tin.
  • Peel the bananas and mash them in a bowl using a fork.
  • Mix together all the ingredients in a large mixing bowl to form a batter.
  • Pour into the baking tin and smooth out. Add a couple of extra chocolate chips on top.
  • Bake for 30 minutes, remove from the oven and cool before serving warm or cold.

Notes

To Store: These can be refrigerated for up to 5 days, and you can also freeze them. I recommend doing this in individually-wrapped portions for easy defrosting.
