Peach and Halloumi Salad Recipe
The perfect summer salad, and a dream blend of sweetness, saltiness and a chilli kick from the hot honey. Throw this together in 10 minutes for an easy summer side dish.

Ingredients

ripe peaches
ripe, but firm

block of halloumi
7-8
fresh mint leaves

tbsp
hot honey
Olive oil
for frying
Instructions
Cut the halloumi into strips around 1cm thick. Spray a little olive oil in a frying pan and place on a medium heat.
Lay the halloumi out in one even layer in the pan, fry for 2-3 minutes per side until browned and then remove from the heat.
Meanwhile, cut the peaches into 8 wedges, removing the stone. Finely slice the mint leaves into thin strips.
Arrange the peach wedges and hot halloumi in a bowl, drizzle with the hot honey and then sprinkle with the sliced mint leaves to serve straight away.
