These maple za'atar roasted sweet potatoes are the best side dish for a salad, barbecue, or roast dinner. They're so versatile and can be eaten hot or cold. This recipe would serve two people as a main or 4 people as part of a serving platter.
Preheat the oven to 200'C / Fan 180'C / Gas Mark 4. Get out a large roasting tin, drizzle a little olive oil in the bottom and set to one side.
Roughly scrub the sweet potatoes and then chop them into large chunks - around 2 inches in size. (You can peel them first if you like but I like to leave the skin on.)
Add the potato chunks to a large bowl. Drizzle over the olive oil and then add the za'atar and sesame seeds. Toss to coat, then pour out into the roasting tin. You want the potato chunks cover the bottom of the tray.
Roast for 30-35 minutes, remove from the oven and drizzle over the maple syrup. Toss the potatoes to coat them in the syrup and then serve hot, sprinkled with a little sea salt.

Notes
These potatoes are lovely eaten hot and can be kept in the fridge for up to three days. I wouldn't recommend freezing them as they tend to go a little soggy.
