1clovegarlic
1tbspolive oil
150gfinely chopped cooked ham
500mlgluten free vegetable stock
300gfrozen peas
Instructions
Heat the oil in a large pan and then add the garlic and onion. Fry for 5-6 minutes until starting to soften.
Add half of the ham hock and fry for another 2-3 minutes. Add the peas, stir until mixed and then cover with the stock. Pop a lid on the pan, bring to the boil and simmer for five minutes.
Remove from the heat, add to a blender (or use a stick blender) and blend until smooth. Be careful not to overfill your blender - you don't want to get burnt!
Pour back into a pan, add the rest of the ham hock and stir through before serving with gluten free bread for dipping.
Notes
This soup is dairy free but for an extra added treat, if you can have dairy, try adding a swirl of crème fraîche before serving.
Can be stored in the fridge for around 3 days or can be frozen for up to six months.
