Gluten free French toast is the ultimate weekend brunch. Gluten free bread is soaked in egg, vanilla and milk before being fried to golden perfection in butter.
Add the eggs, vanilla extract and milk to a bowl and whisk well. Pour the mixture onto a large plate to make it easier to soak the bread.
If you like you can cut the bread into triangles, or leave the slices whole. Take a slice-or-two (whatever will easily sit on the plate without overlapping) and dip into the egg mixture.
Leave to soak for 10-20 seconds then turn over and repeat. Remove the soaked bread onto a separate plate and keep going until all your bread is soaked in egg mix.
Melt the butter in a large frying pan or skillet on a medium heat. Once hot, add the bread slices (however many will fit in one layer at-a-time) and fry for 1 minute. Flip and fry for another minute – the bread should be golden on each side. If not, fry a little longer until it is.
Remove from the pan and stack the French toast on a plate, keeping it warm with some foil while you cook the rest. Once it is all cooked, serve with lashings of maple syrup, Greek yoghurt and fresh berries.
