These easy, 4-ingredient Energy Balls are the perfect afternoon snack! Feel free to add any extras you like, such as chopped nuts and seeds - or roll them in extra cacao or crushed nuts.
Blend all the ingredients (except the coconut) in a food processor until you have a thick dough.
Split into 12 even-sized pieces and roll into balls using your hands.
Spread the coconut on a plate and roll the balls in the coconut. Refrigerate for 30-60 minutes before eating.
Notes
Storage: These energy balls can be stored in the fridge for around a week (though would probably last longer!) and can also be frozen.
