Peel the potatoes and cut them into large chunks, all equal in size. Any small potatoes can be left whole.
Add the potatoes to a pan of cold water and place on a high heat. Bring to the boil then boil for 7-10 minutes until the edges are just starting to go soft.
Drain the potatoes into a colander, shake them gently to rough up the edges a little (helps makes them extra crispy!) and cover with a tea towel. Leave to steam dry in the colander for 5 minutes.
Add the drained potatoes to an air fryer basket, drizzle over the oil and sea salt then toss to coat. Make the sure the potatoes are spread in one even layer with some space between them - otherwise you may have to cook them in batches.
Air fry at 190C (374F) for 30 minutes, turning them half way through cooking. They should be gorgeously golden brown on the outside and fluffy inside. Serve hot with your favourite meats and veg.
