This easy Tzatziki Sauce is the perfect creamy, refreshing accompaniment to your favourite Mediterranean dishes. A minty yoghurt and cucumber dip, great for gyros, burgers and dipping veg croutons or gluten free pitta triangles.
Grate the cucumber using a box grater (and the coarsest side).
Place the grated cucumber in a clean tea towel and squeeze out as much excess moisture as possible.
Add everything to a bowl and mix together well. Ideally, make ahead of time and refrigerate for at least an hour before serving.
Notes
Storage: This tzatziki actually gets better with time - ideally make it an hour ahead of serving if you can. It will keep for up to a week, stir well before serving.
