This simple rocket salad recipe features my favourite balsamic dressing, tossed with fresh rocket leaves and sprinkled with parmesan shavings. It's the perfect base salad or side dish for any meal.
Wash the rocket and shake off any excess water. Add to a large serving bowl.
Mix together the olive oil, balsamic vinegar and maple syrup. I find it easiest to either whisk it with a fork or shake it in a sealed container.
Pour the dressing over the rocket, sprinkle over the parmesan and toss together. Serve immediately.
Notes
Storage: This salad is best made fresh otherwise it can go soggy if left in the fridge - but it only takes 2 minutes anyway. You can make the dressing in advance and toss together just before serving, if you like.
