This Gluten Free Tomato Soup recipe is like a hug in a mug and the dollop of harissa paste gives it a lovely little kick and smoky flavours. Made with canned tomatoes to make this a super cheap and easy lunch for any time of year.
Add the olive oil to a large pan and place on a low heat. Add the onions and garlic and cook on a medium heat for 3-4 minutes, stirring occasionally, until they start to soften.
Add the tinned tomatoes, tomato puree and harissa paste. Stir well then pour in the vegetable stock (top tip - use some of the stock to swill any leftover juices from the tomato tins and add to the mix so you don't waste any!).
Bring the mix to a boil, place the lid on and turn down to a simmer. Leave for 8-10 minutes, then remove from the heat and leave to cool for 5 minutes before using a hand blender to blitz the soup until smooth.
Serve with a swirl of sour cream (if desired!), freshly chopped herbs and a handful of gluten free croutons.
