This Cheesy Meatballs Pasta Bake is the perfect comfort food! A rich tomato sauce with beef meatballs, peppers, spinach and gluten free pasta, topped with lots of cheese.
Cook the meatballs in the oven or air fryer as per the pack instructions. I usually pop them in a 180'C / Fan 160'C / Gas Mark 4 oven for 15-20 minutes, or in the air fryer for 12 minutes at 200C. Make everything else while they're cooking.
Bring a pan of salted water to the boil and cook the gluten free pasta for the instructed time on the pack (usually around 10 minutes). Once cooked, strain off straight away.
While the meatballs and pasta are cooking, make the sauce. Add the olive oil to a large pan and bring to a medium heat. Add the onions and garlic and gently fry for 4-5 minutes, stirring regularly, until the onions go soft.
Add the chopped peppers and sprinkle in the basil and oregano. Mix well and cook for another 3-4 minutes.
Add the tinned tomatoes, passata, red wine and vegetable stock pot. Stir well, bring to the boil and simmer for around 8-10 minutes.
Remove the cooked meatballs from the oven (but leave the oven on - turn down to 180'C / Fan 160'C / Gas Mark 4 if not already there) and add to the sauce along with the spinach leaves. Pour in the drained pasta and stir everything well.
Pour into an ovenproof dish (if your pan itself is not already ovenproof), spread out evenly and then top with the cheeses. Bake for 15-20 minutes until the cheese is melted and the sauce is bubbling up around the edges. Serve hot.
