These easy gluten free fish goujons are the perfect family dinner. Chunks of cod fillet are coated in crispy gluten free bread crumbs for the perfect crunch! Great for freezing too.
Preheat the oven to 200C / Fan 180C / Gas Mark 6. Grease a non-stick baking tray with a little oil.
Pour the gluten free bread crumbs onto a large plate. On a separate plate, mix the GF flour and salt and pepper. Add the beaten egg onto a third plate and set aside.
Chop the cod fillet into strips of your chosen size, and then coat each bit in the egg, then flour, then egg again, then finally the bread crumbs. Really press the bread crumbs into the cod, then lay the pieces on the baking tray.
Bake in the oven for 15-20 minutes until golden brown and the fish is cooked through. Serve hot.
