300gself-raising gluten free flour(I use FREEE, see notes if using plain gluten free flour)
300gnatural yoghurt(or Greek yoghurt)
75gmature Cheddar cheesegrated
1tspsalt
For the topping/dip:
20gmelted butter
1/2tspgarlic paste
Instructions
Preheat the oven to 200'C/ 180'C fan/ Gas 6. Line a baking tray with a sheet of baking paper and set to one side.
Add the yoghurt, cheese, gluten free flour and salt to a large mixing bowl. Use a spoon or spatula to start to mix the ingredients together - as it thickens into a dough, use your hands to bring it all together into a dough.
Break the dough into pieces weighing approx 50g each, roll them into a ball and then place on a baking tray, with a few mm between them.
Bake in the oven for 15-20 minutes until crisp and golden on top. Remove from the oven. Mix the butter and garlic paste together and either brush this over the hot doughballs or serve it as a dip on the side.

If you don't have any self-raising gluten free flour, you can use 300g plain gluten free flour plus 3 tsp baking powder instead. If your gluten free flour blend does NOT contain xanthan gum, you'll also need to add 0.5 tsp of xanthan gum to the mix to help the texture.
These doughballs are best eaten warm from the oven. They can be frozen and reheated when desired.
The dough consistency can depend on which yoghurt or flour you use. If the dough is too sticky, add a tiny bit more flour at a time. Too dry, add a tiny bit more yoghurt at a time, until you have the desired consistency.
