This quick and easy Creamy Sausage Pasta dish is a great midweek meal when you're in a hurry. Sausage chunks in a garlic, chilli and sun-dried tomato creamy pasta sauce with gluten free pasta.
Cook the pasta as per the pack instructions while you make the sauce. I always recommend bringing the water to a rolling boil before adding the pasta, and drain it as soon as it's cooked to avoid a gloopy mess!
Roughly chop the sausages into chunks. Heat the oil in a large pan over a medium heat then add the sausage chunks. Fry for around 5 minutes until browned on all sides.
Add the peppers, red onion and garlic and continue to fry until the vegetables start to soften. Turn the heat down to low.
Add the garlic, sun-dried tomato paste, chilli flakes, bouillon and cream cheese and stir well. Once the pasta has cooked, drain it, but reserve 100ml of the pasta cooking water and add to the sauce. Stir well and bring to a simmer.
Cook for a minute or two so it starts to thicken then add the drained pasta. Mix well and serve straight away - I like to add lashings of cheese on top!
