This easy chicken stroganoff is so rich and tasty, packed with mushrooms, dijon mustard and a creamy sauce. Great for batch cooking and family dinners.
Add the olive oil to a large pan and place on a medium heat. Add the chicken and fry for 4-5 minutes until browned.
Add the butter to the pan and melt, then add the mushrooms, onion, garlic, paprika and cayenne pepper and fry on a low heat for 3-4 minutes until the mushrooms and onion have softened.
Add the wine and continue to cook for another 5 minutes. Then add the vegetable stock, bring to the boil and simmer for a further 5 minutes.
Add the mustard and crème fraîche and stir through. Bring back up to the boil and simmer for another 2-3 minutes.
Serve with boiled rice to soak up the delicious sauce and sprinkle with the parsley. Enjoy straight away!
