A zingy, sweet and spicy salsa that goes with anything! Throw this together in a couple of minutes for a gluten free side dish for the BBQ, or dip for your favourite chips! Serves 4-6 people as a side dish.
Chop the pineapple into small chunks. Finely chop the onion. Remove the avocado flesh from the skin and cut into small pieces. Deseed and finely chop the chilli and roughly chop the coriander.
Add the pineapple, avocado, red onion, chilli and coriander to a large bowl along with the juice of the lime and a good pinch of salt. Mix well and serve straight away.
