I first spotted Amy's Kitchen gluten free rice mac & cheese in the frozen aisle of Asda in the midst of my student days.
I usually don't bother with ready meals, but I am such a sucker for macaroni cheese, I couldn't resist.
This looked like a proper America-style tv dinner, so I shoved it in the microwave, got myself a tray and switched on the telly (if a job's worth doing.....)
Normally I find ready meals sloppy, tasteless and generally disappointing...but this was simply delicious.
I think, in fact, it is the simplicity of this mac & cheese that makes it so tasty.
Rich, creamy, cheesy, gooey and all-round delicious, there is nothing disappoints about this dish.
If you want something easy and comforting to make you feel all warm and homely - Amy's Kitchen definitely has the answer.
And I was even more pleased to find it stocked in my local Tesco store this week as well - so next time I slip back into my student head and fancy a treat, I know where I'll be heading!

Hello Happy St Patricks day I like your mac and cheese . I have a friend that has celiacs disease and she inspired me to cook gluten free food I am slowly learning .I am realizing it's not easy to cook that way.but I love the challenge.Last night I made gluten free Irish soda bread .It was fun.I don't have celiacs disease but love to and wanted to broden to my cooking knowledge and skills.So I am glad for sites like yours.Keep up the good work.Have a good day.
I love this ready meal, although bizarrely my Tesco don't keep it with the other free-from frozen stuff so I often have to hunt for it. I just add more pepper to it and it is my comfort food of choice. Absolutely divine, I agree!
