Avocado egg boats - a quick and easy gluten free snack or breakfast

After all the gluttony of Easter, I'm definitely craving something healthy to eat!

Since training and eating 'properly', I find myself feeling disgusting when I have a bit of a weekend binge - kind of like I need to blast it in the gym, have a long bath and drink three gallons of water!

But, the next best thing, was a healthy dose of skin-friendly avocado goodness!

Inspired by a recipe I found on the amazing Eat Feel Fresh blog - a new favourite of mine - these avocado egg boats, as I have coined them, are quick, simple and taste delicious.

The egg is a great way to get your protein, and the avocado is packed full of vitamin E! What's more, these beauties are vegetarian and dairy and gluten free - a perfect breakfast (great with bacon!!) or snack on their own.

The idea is simple - halve the avocado and scoop out the stone, and some (if you're like me, you can just sit there with a spoon and eat yourself an egg-shaped hole!).

Crack a small egg into the hole and, steady does it, bake in the oven for around 15 minutes as Gas 6. This means the yolk is still a little runny - I think 12 minutes is probably perfect for me as I like my egg yolks runny!

Crack over some black pepper and sea salt and dig in!
