So the letters to the Supermarkets were sent off yesterday! Hopefully I will receive some responses soon, it would be nice to hear their point of view as to their broken up GF bread!

Pre-grilled Halloumi cheese

As for Gluten Free life in the past few days, it’s been pretty eventful! I made some gorgeous stuffed peppers last night – I roasted the peppers with mushrooms, red onion, sweetcorn and halloumi cheese, and I served them with boiled rice for a healthy meal!

It’s perfect with meals, in potato bakes, with gluten free pasta, or in salad. Quite frankly, I would eat with anything if I could!

I absolutely ADORE Halloumi cheese! For those that haven’t tried it, this hard cheese is made from sheep and goats milk so it’s much better for you than normal cheese! It has a chewy texture and a more-ish, salty taste. You can eat it either raw, grilled, baked or fried, and it’s absolutely gorgeous either way.

I find sometimes I really don’t fancy eating meat, and this cheese provides a meaty alternative. I first discovered it in Nandos, and I have been hooked ever since! Perfect for summer BBQs!

Definitely something for all those, Coeliac and non, to try. It’s a little bit pricey but for a tasty treat I would definitely pay out!

  2. I discovered halloumi a few years ago as I moved to Cyprus, never heard of it before. But straight away I fell in love with that delicious cheese that is so versatile and gives its special note to so many dishes. Very often we try new halloumi recipes and there is not one week since then, that we won’t have at least one meal with halloumi, not to speak about BBQs, where having halloumi is a must.
